Definitely an iPhone, a d7000 (or similar), one or two smaller lenses, extra battery, charger and traveler tripod. I think that'd be it. The documentary did say that too much gear was the major problem for hikers, and that they often unloaded it and mailed it back to their home at one of the supply stores along the way.
Nikon might have small mirrorless by then, I'd take that perhaps.
