"D80 acting funky"

Not sure what is going on, but thought maybe someone would have an idea of what to do. Recently I've noticed that when I set my camera in Manual mode, it doesn't stay with the settings I choose. Not sure what is going on. Example would be the other night I set it for onboard flash open, 1/125 second, F4.5. When I took the photo, it changed my settings to 1/200 second and I didn't get the shot I wanted.
Any ideas why it has decided to have a mind of it's own? What I can do to fix it?
