Does the D5100 save camera data such as Arp,f-stop,ISO,shutter setting with each picture?

Yes, in the EXIF data for the JPEG or NEF file.

ISO, shutter speed, aperture, lens, what focal length that lens is set to, picture control setting used, if the flash fired and in what mode, number of times the shutter has fired, if a GPS is attached it tags the Lat and Long, and so on. It stores a huge amount of data to look at later. DxO uses it to correct for known aberrations in the lens and sensor, but you can use it for anything you like.
